Soup’s on

Raw soup.

Geez. That doesn’t sound too exciting, does it?

But wait. This quick, pick-me-up lunch that I whizzed in my Vitamix today made me say ‘ooh la la!’ aloud after the first spoon lick.

No need to expound on the health virtues of this¬†bowlful – suffice it to say, it is a merry mixture of enzymes, vitamins, minerals…it will make you feel good and get your glow on!

Without further ado, here is the recipe:

Cauliflower Power Soup in the Raw

Ingredients

1 1/2 cups filtered water

1 tbsp. raw apple cider vinegar (with mother)

1 tsp spirulina powder or chlorella/spirulina mix (optional)

2 heaping tbsp. nutritional yeast

1/2 head medium-sized cauliflower

1/2 garlic clove

1/2 cup grape tomatoes (or 1 medium-sized tomato)

2 celery ribs

1/2 head leafy green lettuce

1/2 avocado

Sea salt, to taste

Directions

In order listed above, place all ingredients except for avocado in blender; blend until smooth. Add avocado and sea salt (to taste), and blend until creamy.
