Spring sipper

I started the day with a big, toothy smile.

This June-like weather on the West coast is enough to make one’s face ache from non-stop smiling. Honestly! You just can’t help it. There is a definite joie de vivre a-happenin’ in spades here. I love it!

I also had the good fortune of pairing my morning smile with minty-fresh breath today.

Here’s why:

This, my friends, is a divine green smoothie – very similar to the Basil Pear Strawberry Green Smoothie of Julia’s posts of yore, but a tad less heavy on ingredients, and full of fresh mint leaves instead of basil.

Oh boy. It was luscious.

Folks – it’s time to get over the woes of Winter and get your Spring on! Be kind to your body.

Dust off that Vitamix and blend up this anti-inflammatory, alkaline-forming, detoxifying, easy-to-digest, nutrient-dense baby for your next morning meal.

Thick Minty Strawberry Pear Smoothie

1 cup filtered water

1 tsp cinnamon

1 tbsp. flax seed (ground, if you do not have a strong blender)

1 big knob of fresh ginger root, peeled

juice of 1/2 lime

1 tsp spirulina/chlorella mix (or one or the other)

lots of fresh, organic mint leaves (I used at least 1 cup, packed)

1 big handful of fresh organic parsley, stems included

4-5 leaves of chard (or kale -without stems- or 1-2 cups baby spinach or 1/2 head of leafy green lettuce)

2 celery stalks, chopped

1 small organic pear, chopped (I used Bartlett this time)

10 fresh organic strawberries (on sale at my local grocer these days!)

Place water and next 7 ingredients in blender. Give a good whirl until smooth. Add leafy greens. Blend. Add chopped celery, pear and strawberries. Blend until smooth and creamy.

I only used 1 cup of water in this recipe as I wanted a really thick and creamy smoothie that I could enjoy with a spoon.

A winner.
