Smoothie Puddin’

I love smoothies. And I make a point of ensuring mine are of the thick and creamy, eat-it-with-a-spoon, turn-it-upside-down-without-making-a-mess consistency.

I also love pudding. Likely for that very same reason – puddin’, if made correctly, is lusciously smooth and creamy. Pudding makes it onto my swoon-worthy list. Pudding oozes sex appeal.

So, in order to change things up a bit these days, I have a new little breakfast concoction that says good morning, oh-lover-of-all-things-smooth-and-creamy, Julia!

Here is my Superfoods Smoothie Puddin’ base:

Ingredients

1 1/2 cups unsweetened hemp milk (or any other non-dairy milk)

1 heaping tablespoon of the best ‘true’ organic cinnamon you can find (see below)

1 heaping tablespoon of spirulina (or spirulina/chlorella combo)

1/2 organic English cucumber

2-3 organic celery stalks

1 heaping teaspoon of maca powder (oh yes…another major superfood star…)

1 big bunch of swiss chard leaves and stalks

1 heaping handful of basil leaves

1 heaping handful of mint leaves

1 1/2 cups of fresh organic strawberries

1 1/2 cups of frozen organic blueberries

Preparation

Add ingredients, a bit of a time, merrily blending away. Finish off with a good whirl-aroo with the frozen blueberries. Then, pour into one-portion -sized Mason jars.

Cover and freeze immediately what you aren’t using now to stop loss of nutrients from oxidation. Keep out the jarful that you will be indulging in tomorrow morning (or an hour or so from now), and add a couple of heaping tablespoons of chia seeds to the jar. Stir. And stir again for a few further moments. Add natural sweetener to taste, if needed. Cover and put in fridge until morning (or for the next hour or more) to allow thickening. You will awaken to a thick smoothie-chia seed-pudding delight. Toss a few fresh berries overtop and savour.
