Tacos with a twist

I recently went a-huntin’  on the Web for a  taco/tortilla recipe. I wanted to whip up some sort of malleable, soft holder for all filling/sandwich innards worthy of holding. And I wanted a recipe that didn’t use grains with gluten.

While surfing, I stumbled across this recipe that intrigued me. My intention wasn’t to go totally grain-free, but I was intrigued and so had to give this ‘Paleo Fish Tacos’ recipe a try.

Yup. These soft, crepe-like tacos were made with coconut flour and egg whites, and really quite delicious!

They had a tendency to fall apart, though. And so I continued to wander about on Against All Grain’s website, and found this recipe.  Now those tortillas look like they could fit the bill as a sandwich filling holder.
