Quickie pesto

Here is a winning pesto recipe that doesn’t go overboard on the oil and nut front, yet still packs a wallop of a taste sensation.

And it offers a heap of healthy nutrients.

You can’t go wrong with this one, so grab your blender or food processor and give the following a whirl:

Quick and Healthy Pesto


2 cups fresh organic basil

2 cups fresh organic spinach

2 cloves garlic

1/4 cup walnuts

2 tbsp hemp hearts/seeds

2 tbsp olive oil

2 tbsp nutritional yeast

2 tbsp fresh lemon juice

1/2 tsp sea salt

freshly-ground pepper, to taste


Toss all ingredients in blender – give it a good whirl until well-mixed. Add additional olive oil if needed to create a creamy texture.

Pour into small glass jar and top with a layer of olive oil.

Store in fridge.

Note: this pesto tastes even better after flavours have melded for a few hours or overnight.
