Aw…Fudge!

What a wonderful afternoon talking ‘shop’ with some lovely ladies in Cloverdale! (Thanks so much for spending your Sunday afternoon with us!)

I shared my list of healthy food gems, and we merrily sampled along.

But the piece de resistance was a lovely raw freezer fudge!

Dessert

Yum.

Allow me to share this not-too-sweet-but-creamily-luscious fudgy jewel of a recipe:

Sunflower Cups

Ingredients

3/4 cup sunflower seed butter

3 tbsp. organic virgin coconut oil

1/4 cup coconut butter (also known as creamed coconut)

2 heaping tbsp. raw cacao powder

2 tbsp. maple syrup

Coarse sea salt

Preparation

Melt all ingredients over low heat and stir until creamy. Pour fudgy goodness into small parchment cups, molds, mini muffin cups…or whatever suits your fancy. Sprinkle coarse sea salt over top. Place in freezer for at least 30 minutes to firm up. Remove and savour!
