I love a good nosh. Whether it’s a carrot plucked out of the garden or a hunk of fresh wild sockeye salmon or a handful of blueberries, real food tantalizes my taste buds!

And real food transformed into a meal by someone special just can’t be beat – because it has that extra ingredient of love.

And here’s the thing: meals made with love don’t have to be complicated affairs. They can be oh-so-simple. In fact, Unfussy Fare is sometimes the best.

This weekend, a dear friend invited me over for some Unfussy Fare. We dined on down-to-earth deliciousness, shared wine, and talked our hearts out. We even danced!

It was indeed, The Best.

Simple Saturday Supper

1 large sweet potato (or 2 small)

2 eggs

Toppings – crumbled goat cheese, green onion, chopped tomato

Roast sweet potatoes in their jackets until soft inside at 350 degrees. Remove from oven, slice lengthwise, and smash a bit with a fork. Make 2 wells, and crack an egg into each well. Return to hot oven and bake until eggs are set. Sprinkle with sea salt and pepper to taste, crumbled goat cheese, chopped onion and tomato. And love, of course!
